Big Bluestem is the king of the North American prairie — the dominant grass of the tallgrass ecosystem that once stretched from Canada to the Gulf Coast, its roots plunging 10 feet into the earth and its stems rising 6 feet or more into the sky. In the Cajun prairie of southwestern Louisiana, it was the grass that defined the landscape before European settlement, swaying in the Gulf breeze in waves of blue-green that turned copper and burgundy in autumn. Its three-parted seed head — resembling a turkey's foot — gives it its other common name: Turkey Foot.

A single mature plant can have roots extending 10 feet deep — holding the prairie together from below while it dances above.
