🐟 “Catfish Sauce / Couvillion, on da Bayou!”

Chaque fois mo veux cĂ©lĂ©brer eun “Moment,” mo pense Ă  mo mangĂ© favori.  
Ça fait beaucoup de bouffe, mon ami, mais c’est comme ça mo marche.  
Mo garde mo favoris dans eun livre — eun livre de cuisine qui ressemble Ă  eun encyclopĂ©die.

Asteur, ma famille commence à sortir d’eun mauvais temps.  
GrĂące Ă  not’ Seigneur, not’ Grand MĂ©decin, ça va “mieux.”  
Quand le Bon Dieu te donne eun p’tit soulagement, tu rĂ©ponds avec eun bon couvillion.

Asteur c’est not’ Happy Couvillion.

Simple. Basique. La vraie bouffe du bayou.

Mo fais toujours ça en trois:  
coleslaw, maque choux, pis les lima.  
Pis mo veux toujours eun p’tit “frit Ă  cĂŽtĂ©â€ — poisson ou chevrettes, n’importe lequel fait l’affaire.

AprĂšs ça, eun p’tit sucrĂ©,  
pis eun tasse fraßche de Cajun in a box, torréfaction foncée, bien moulu.  
Un jour mo va commencer Ă  torrĂ©fier mo‑mĂȘme juste pour l’arĂŽme dans la maison.

Ça, c’est not’ düner aujourd’hui —  
eun célébration tranquille, eun merci,  
pis eun rappel que la guérison vient lentement, mais sûrement, sur le Bayou.

Any time I want to celebrate a “Moment,” I think of my favorite meal.  
That’s a lot of food, my friend, but that’s just how I’m built.  
I keep my favorites in a book — a cookbook that looks like an encyclopedia.

Today, my family is finally getting past a rough spell.  
Thanks to our Lord, the Great Physician, things are looking “better.”  
And when the Good Lord gives you a little mercy, you answer with a good couvillion.

So today, it’s our Happy Couvillion.

Simple. Basic. True bayou fare.

I always build it in threes:  
coleslaw, maque choux, and limas.  
And I always like a little “fried on the side” — fish or shrimp, either one works.

Then a little something sweet,  
and a fresh cup of Cajun in a box, dark roast, ground just right.  
One of these days I’ll start roasting my own beans just for the aroma in the house.

This will be lunch today —  
a quiet celebration, a thank‑You meal,  
and a reminder that healing comes slow but sure on the Bayou.
